15-minute Healthy Recipe: Microwaved Eggplant

A quick simple recipe for a healthy dinner dish of microwaved eggplant. Inspired by Jamie Oliver's 15-minute dinners and previously chatty-posted recipes.

To prepare: Remove the leafy tip of the eggplant and place on a microwave safe plate. Microwave for 5-10 minutes until desired consistency, turning once halfway into cooking. Serve on a plate sliced or whole with a dash of salt.

Note: adding salt flavor will reduce the health of the dish.
