Riffing aside, one of the best things they did for detail on the GT5 premium cars was insist that they have an example of the car in the studio. That way, they can get the instrument clusters almost perfect (unlike Turn 10, who wings it on some of the LCD screens).
Sound; yeah, they need to do some more work on synthesis, but I love how the direct samples mean that the Lexus LFA sounds like a real Lexus LFA, and not like a Lamborghini Gallardo, and that the BMW E60 M5 sounds like an E60 M5, and not a Lamborghini Gallardo. Turn 10's theory of "Engines are all basically trumpets!" is a bit shortsighted, and makes some of the cars sound a little goofy.
That said, GT6 needs to be able to load faster. That was one of GT5's cardinal sins, especially considering that GT5 Prologue, the prequel game with almost the exact same car and track graphical assets and the exact same engine, loaded cars much faster, on the exact same hardware.
Also, a good licensed music soundtrack library was part of why GT5 had a huge leg up over Forza 4's "stock footage" library of 7 songs. Hopefully Polyphony will leave dubstep out of GT6.-

Which is because those were ported from GT4, and if they didn't do that, they'd have only about 200 cars in GT5.
Probably the best dramatization of reaching this state is from the 11-30-2010 Bombcast: http://www.youtube.com/watch?v=VBpJNZOhxGI
