Little dude finally popped out! Born 11/12 at 9:23 AM, 4 pounds 10 ounces. Everyone seems to be doing very well.

Lamb and Beef Gyros. My wife had only two requests for her birthday, homemade gyros and angel food cake. We had made the Serious Eats Greek American Gyros before but that recipe calls for forming a square loaf and twice baking in the oven. I thought I could get it to work on the Green Egg using a horizontal rotisserie. So I scaled up the recipe using 2lbs of Lamb and 2 lbs of Beef.
Instead of a meatloaf style shape, I pressed into a cylinder using a container, stacked another on top and used bungee cords to keep it under pressure. I put it on the rotisserie and cooked at about 400F, shaving off strips as the outside crisped up and browned. Made gyros with flat bread, Dill/garlic yogurt sauce and topped it off with cucumbers and sliced red onion. Turned out pretty tasty and even got a smoke ring on the meat.
