I go with about double the broccoli and an extra cup of stock. With the extra liquid I do a large russet potato. I also add a lot more salt but you should always Salt to taste. But the technique is perfect. There is so much great broccoli flavor in there and the roasted broccoli florets are what make this an amazing soup. If you aren’t sure where to get American cheese from a Deli, Super Target has you covered. -

You want in on this? You can, and it's easy. You don't need canning equip, worry about fermenting, of any other complicated stuff.
Here's what you need:
Cucumbers, I get about 4 or 5 big ones and slice them up. Do whatever you want, slice and dice baby.
Dill sprigs. Wtf do I get these? It's easy, check the aisle where bag salads are kept. They got these plastic tray of various fresh herbs. You can't find them? Okay whatever, go to the spice aisle and pick up a jar of dill seeds.
Okay, next you need garlic. Pick up a head of it, a jar of white vinegar , and some salt.
Okay that's it. Not too bad huh?
Next up, cooking time. Get a pot, and fill it up with 8 cups of water and 1 cup of vinegar, and about a 1/4 cup of salt.
Bring that mess to a boil. That'll get everything mixed.
Okay, take that pot off the heat. Throw your cucumbers in the pot. Peel your garlic and throw that in, and throw in your dill sprigs. I like dill so I put 8-10 of those mofos in there.
Okay that's it. Cover it and put it on the fridge. After a day or two, you should be good to go. Longer they sit though, the better.
