Ok well they did the “re-engineered” levels thing (read: cut down) on the Atari Jaguar with the original and everyone hated it. And they did the same thing with DOOM 3 on the Xbox and everyone hated it.
It’s better to have the full experience at a cost of frame rate and fidelity than nothing at all. It’s not like it hasn’t had a solid year and a half out there with the best possible experience (a capable PC).
Honestly the idea of a portable version of DOOM with physical controls is just awesome to me.
Plus DOOM coming to unconventional hardware is a tradition. They got the original running on the Super Nintendo for fucks sake. -

Crank up the motion blur, ensure a constant 33.33ms frame time and it'd actually pretty decent for a small handheld screen. Despite being billed as a fast action shooter, Doom is really not that fast until you get some upgrades that boost your movement speed after glory kills and such, and those buffs are brief.
30fps is fine for single player game like that on the go, 60 would be amazing but still impressive it works at all.

Its not ideal. I wonder what they would have gotten if they'd pulled back the visual effects like depth of field and everything.
This would probably have been a lot of work to implement but a 30fps mode with all the visual bells and whistles on and a 60fps mode with stripped down graphics would have been cool (if that's possible by stripping things back ofc) -
When I got my Vega 56 I saw that I could do downsampling from 5K so obviously I tried it with Doom. 30 fps at max settings!
I agree that's just shit but there are degrees of shittiness. They did the input right so it's not tied to fps, it looked visually bad to me but I could still play it quite well, console players will probably think nothing of it.
