The guys at JediKnight.net have managed to obtain some footage from Raven's Jedi Knight 2: Jedi Outcast (as well as some of the other SW games). It's extremely low res and only runs for 15 seconds, but it shows you a tiny bit from what was displayed for the media at the LucasArts booth.
